Each and every dumpling is lovingly hand made in Port Elliot.
The dough wrapper is handmade using organic Lauke flour.
The fillings are plant-based using seasonal and local ingredients wherever possible.
Dough is rolled, filled and folded, each one by hand by a maker and cook that loves the process.
Dumplings are sold frozen for you to cook and enjoy at home.

Gochujang Dipping Sauce

2 tbsp soy sauce
1 tbsp sesame oil
1 tbsp rice wine vinegar
1 tbsp gochujang
Combine all ingredients in a small bowl.This sauce great with our Kimchi Dumplings or Zucchini + Shiitake Dumplings.

Chilli + Lime Dipping Sauce

1 tsp garlic, finely died
1 long red chilli, finely diced
4 tbsp soy saue
5 tbsp lime juice (about 2 limes)
1 1/2 tbsp sugar or honey
1/4 hot water
Combine all ingredients in a small bowl.This sauce great with our Peanut + Spring Onion Dumplings.

Green Chilli + Coriander Oil

2 jalapeƱos
2 cloves garlic
1 bunch coriander
1/2 tsp cardamon
1 tsp cumin seeds
1/2 tsp salt
1/3 cup extra virgin olive oil
2 tbsp lemon juice
Blitz all ingredients together in a small blender until smooth.This same is great with our Carrot + Kale Dumplings or Chickpea Dumplings.

Cook

Cook dumplings from frozen.
We recommend serving our dumplings steamed or fried.
Steam
Line your steamer to prevent dumplings from sticking. You can use baking paper with holes pocked in it, cabbage or cauliflower leaves or a thin layer of oil.
Steam for about 10 minutes until the dough is slightly translucent and the filling is hot.
Fry
Heat a thin layer of oil in a frypan over medium heat.
Fry dumplings until starting to brown on the bottom.
Add about a shot glass of water to the pan (and an optional handful of greens) and quickly pop on the lid.
Allow the dumplings to steam for 5-6 minutes until the water has evaporated and the dough is slightly translucent.
Remove the lid and continue to fry until the bottom of the dumplings reach desired crispiness.
